Simple and Quick Bite

Hello! I hope that your Friday is going great! I slept in, went grocery shopping, organized around the house, and now I am getting ready to head to the gym!

Sometimes I have a tendency to over think things when it comes to food, and I forget that sometimes the simplest foods can really be the most amazing. In efforts to keep it simple—and maybe because I was running out of food—I made a yummy and simple lunch yesterday and it was great!!

I oven roasted chicken breast, cut up half, made some brown rice and added in frozen veggies. It was great! This would have been a great meal to take to the office as well.

I hope that you have a wonderful weekend! We have a whole three day weekend here in Utah, Pioneer Day! It’s my first Pioneer Day (I’ve never heard of it before I moved here) and I am excited to check out the festivities.
